The vines are 25 to 50 years old. They are cut in cordon of Royat. In order for our Vinsobres to express its full potential, we rely on the quality and concentration of flavors. That’s why we do not exceed 30 HL / ha.
After harvesting by hand in majority, the grapes undergo a total destemming. Vinification in concrete vats with daily pumping over for a better color extraction.
The wine stays on the marc for more than 4 weeks in order to gently extract the phenolic compounds.
This results in a long period of ageing in tank before bottling.
